Yes, you read correctly, I’m fiddling with pork chops again.  I can’t seem to keep away from them.  Perhaps it’s because of the hope that I’ll stumble across a gem of a recipe that knocks Steve’s socks off.  The one I found was from Cooks.com.  I find that their recipes are simple and easy to follow.  It’s a good basis for a recipe.  I often make additions and changes.  So it’s been on my mind to not only get Steve to eat pork chops again, but to get him to eat them with barbecue sauce.  (Remember, he doesn’t really like barbecue other than beef brisket and pulled pork without sauce.)  We were in the appropriate aisle when I set eyes on Sweet Baby Rays barbecue sauce.  All I saw was that it was award winning and that was enough for me.  Surprisingly it was enough for Steve as well.  So here it is…

Pork Chop on Foodista

I took one-inch bone in pork chops and seasoned both sides with salt & pepper.  Then I minced up a large onions and spread more than half of it on the bottom of a pan (make certain that you use a pan that you can put into the oven.)  I placed the pork chops on the pile o’ onions and covered them some more with onions.  I added water, just enough to cover the chops.  I threw that into a preheated 450F oven for about an hour.  I kept my hopes in check, but my fingers were crossed.  At last, remove the cover, spread on some Sweet Baby Rays and broil til you get a nice color and some of the barbecue sauce cooks down and bubbles.  You could even wait til it forms a bit of a crust.  I didn’t have the patience for that.  So I was thinking southern but had no corn, no cornbread, no slaw, no nothing to serve with these chops.  So I dug around and came up with brown rice and canned carrots.  (I’m still enjoying canned vegetables & fruits though a salad is on the agenda for this week - go figure.)  Read on to see if the combination was worthy or not.

Ok.  First me.  I thought they were good.  They were very tender.  I was quite surprised.  My first chop was more tender than the other but they were both good.  I like Sweet Baby Rays barbecue sauce.  I wonder if McD’s based their sauce on it.  There’s a similarity.  I actually enjoyed the brown rice with the meal.  I cooked it with water only and the texture came out nicely.  The carrots were good and Steve’s first words after eating the chop were something like holysh*t!  I was so surprised.  He went on and on about how tender they were.  And he really liked the Sweet Baby Ray’s barbecue sauce.  Yey!  Dinner was a success.

There will be a next time for this dish.  However, I’ve already decided to make modifications.  Firstly, I’m going to add wine, red wine, to the cooking broth.   Then I’m going to mix in korean hot pepper paste to the Sweet Baby Rays’ barbecue sauce.  It’s going to give the sauce a little kick.  I am really looking forward to cooking it.
